Potato bread

Wholemeal bread with potatoes. A traditional bread that constitutes a unique and typical recipe of the Upper Garfagnana that translates into a combination of flavor and softness.

INGREDIENTS
Flour
Water
Potatoes
Yeast
Salt

PREPARATION
Prepare the basic dough with the yeast, a little water and a little flour and let it rest. Cook the potatoes in abundant salted water and, once cooked, mash them; then add them to the leavened base dough.

Then add the flour, the cooking water of the potatoes and the salt and knead vigorously until the dough is homogeneous. Give the shape of a loaf and let it rise, covered with a cloth, so it does not dry on the surface. Once leavened, bake in a wood oven for about 40 minutes.
